Torta de Asada

Posted on July 29, 2025July 30, 2025 By Becky

torta de asada

If you’ve never sunk your teeth into a torta de asada, you’re in for a serious treat.
Imagine this: smoky, juicy slices of marinated grilled steak (carne asada), tucked into a fluffy-yet-crusty bolillo roll, layered with creamy avocado, fresh tomatoes, crunchy lettuce, spicy salsa, and maybe even a swipe of refried beans.
It’s the kind of sandwich that makes you want to drop whatever you’re doing, grab an ice-cold soda, and savour every bite.

This isn’t just a sandwich, it’s a piece of Mexico’s street food culture that you can easily recreate at home. Whether you’re planning a weekend treat, looking for something different to wow your friends, or just craving the best carne asada sandwich ever, this torta de asada recipe has you covered.

What Is a Torta de Asada?

In simple terms, a torta de asada is a Mexican steak sandwich.
The word torta in Mexico refers to a sandwich (not to be confused with “torte” in English, which is a cake).
Asada means “grilled,” and in this case, we’re talking about carne asada, which is tender, marinated beef grilled to smoky perfection.

While tacos, burritos, and quesadillas get a lot of attention, tortas are the unsung heroes of Mexican street food. They’re filling, bursting with fresh and bold flavours, and totally customisable. In Mexico, you’ll find them sold at street stalls, markets, and small eateries called loncherías.

The Origins of Torta de Asada

The torta as we know it today is believed to have evolved in the 19th century after the French occupation of Mexico introduced wheat bread into local cuisine. Before that, corn tortillas ruled the scene. Bolillos (small crusty bread rolls similar to baguettes) became the go-to bread for these hearty sandwiches.

Carne asada, meanwhile, comes from the grilling traditions of northern Mexico, particularly in states like Sonora and Nuevo León. Marinating beef in citrus juice, garlic, and spices before grilling over open flames is a time-honoured practice. Combining the two – juicy grilled steak and crusty bread – was a natural and delicious evolution.

Why You’ll Love Making Torta de Asada at Home

  • It’s better than takeaway – fresh steak, perfectly seasoned, right off your own grill or pan.

  • It’s highly customisable – add or skip toppings depending on your mood.

  • It’s quick – most of the time is in marinating; the actual cooking takes minutes.

  • It’s budget-friendly – especially compared to restaurant versions.

  • It makes amazing leftovers – just reheat the steak and assemble again.

Cuisine: Mexican
Ingredients Method

Ingredients

For the Carne Asada:
  • 500 g 1 lb flank steak, skirt steak, or sirloin (flank is my fave for tenderness)
  • 3 tbsp fresh lime juice about 2 limes
  • 3 tbsp orange juice
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: 1 fresh jalapeño sliced, for extra heat in the marinade
For the Sandwich Assembly:
  • 4 bolillo rolls or telera rolls – substitute with crusty baguette if needed
  • 1 large avocado sliced or mashed
  • 1 large tomato sliced
  • Lettuce leaves iceberg or romaine work great
  • 4 tbsp refried beans optional but adds amazing creaminess
  • Your favourite salsa – salsa roja or salsa verde
  • Pickled jalapeños for that tangy kick optional

Method

How to Make Authentic Torta de Asada at Home
    Step 1: Marinate the Steak
    1. In a mixing bowl, combine the lime juice, orange juice, olive oil, minced garlic, cumin, chilli powder, smoked paprika, salt, pepper, and sliced jalapeño (if using).
    2. Place your steak in a shallow dish or ziplock bag and pour the marinade over it.
    3. Make sure the steak is fully coated, then cover and refrigerate for at least 1 hour (overnight is best for maximum flavour).
    Step 2: Grill the Steak
    1. Heat your grill or grill pan over medium-high heat.
    2. Remove the steak from the marinade and let any excess drip off.
    3. Grill for 3–5 minutes per side for medium-rare (depending on thickness).
    4. Rest the steak on a cutting board for 5–10 minutes before slicing thinly against the grain.
    Step 3: Prep the Bread
    1. Slice each bolillo roll in half lengthwise.
    2. If you’re using refried beans, spread them on the bottom half.
    3. You can lightly toast the bread for extra crunch and flavour.
    Step 4: Assemble the Torta
    1. Spread mashed avocado or lay down slices on the bread.
    2. Add your juicy, sliced steak.
    3. Layer tomato slices and lettuce leaves.
    4. Spoon over some salsa (go as spicy as you dare).
    5. Top with pickled jalapeños if you love heat.
    6. Close the sandwich, press down slightly, and enjoy!

Tips for the Perfect Torta de Asada

    • Choose the right bread – bolillos or teleras are ideal; crusty outside, soft inside.

    • Don’t skip the rest time – letting the steak rest keeps it juicy.

    • Marinate long enough – at least an hour, but 6–8 hours gives incredible depth of flavour.

    • Customise your toppings – some people add cheese, onions, or even a fried egg.

    • Make it a meal – serve with fries, tortilla chips, or grilled corn (elote).

    FAQs About Torta de Asada

    1. What is the difference between a torta and a sandwich?

A torta is essentially the Mexican version of a sandwich, made with specific breads like bolillo or telera, and often packed with traditional Mexican fillings like carne asada, milanesa, or carnitas. The flavour profile is usually more vibrant and spiced compared to a standard Western sandwich.

    2. Can I make torta de asada without a grill?

Absolutely! You can use a cast iron skillet or frying pan on the stovetop. Just make sure it’s very hot before you add the steak so you get a nice sear.

    3. What’s the best bread for torta de asada?

Bolillo rolls are the most traditional choice. If you can’t find them, teleras or small crusty baguettes work well. Avoid soft sandwich bread as it won’t hold up to the juicy steak and toppings.

    4. What cut of beef should I use for carne asada?

Flank steak, skirt steak, or thinly sliced sirloin are the most common choices. Flank steak gives a great balance of tenderness and flavour, especially when marinated properly.

    5. Can I make this ahead of time?

Yes! You can marinate and cook the steak in advance, then store it in the fridge for up to 3 days. Assemble the sandwich just before serving so the bread stays fresh.

    6. Is torta de asada spicy?

It can be, depending on the marinade and salsa you use. You can easily make it mild by skipping the chilli powder or jalapeños and using a mild salsa.

    7. What sides go with torta de asada?

Popular sides include Mexican street corn (elote), tortilla chips with guacamole, spicy fries, or even a simple cucumber and lime salad.

    Final Thoughts

Making your own torta de asada at home means you get all the joy of authentic Mexican street food without leaving your kitchen. From the smoky steak to the creamy avocado and the crunch of the bread, every bite is a little fiesta.

So next time you’re craving something bold, filling, and full of flavour, skip the taco run and fire up your grill, you’ll have the best torta de asada of your life in under an hour.
