5 Breakfast Torta Ideas You’ll Want to Make Every Morning

If you’ve never had a breakfast torta, let me tell you… you’re missing out. Big time. Imagine everything you love about a hearty breakfast, such as eggs, cheese, avocado, maybe a little spicy salsa, all tucked inside a soft, slightly toasted roll. It’s like a breakfast sandwich, but with that warm, Mexican comfort-food hug.

I started making breakfast tortas at home a couple of years ago after trying one on our family holiday to Mexico, and honestly? I’ve never looked back. They’re filling, you can adapt them SO easily, and they’re perfect whether you’re cooking for yourself, your partner, or the entire family. Plus, they’re ridiculously easy to stick in whatever’s in your fridge in them.

So, if you’ve been wondering “How do I make a Mexican breakfast torta?” or “What can I put in a breakfast torta?”, I’ve got some great ideas here.

Here are my five favourite breakfast torta ideas that you’ll want to make on repeat.

1. The Classic Mexican Breakfast Torta (Huevos con Chorizo)

If you’re going to make your first-ever breakfast torta, start here. This one’s an absolute classic! Scrambled eggs mixed with spicy Mexican chorizo, a smear of refried beans, melted cheese, and maybe a little avocado if you’re feeling fancy.

What you’ll need:

  • Bolillo roll (or telera roll if you can find one)

  • 2 eggs

  • 1–2 tablespoons Mexican chorizo (cooked until crispy)

  • Refried beans (warmed)

  • Oaxaca or mozzarella cheese

  • Sliced avocado (optional)

  • Salsa roja or salsa verde

How to make it:

  1. Slice your bolillo in half and lightly toast it.

  2. Spread refried beans on the bottom half.

  3. Scramble your eggs with chorizo until cooked through.

  4. Pile the egg mixture on top of the beans, then add cheese.

  5. Add avocado slices and drizzle with salsa.

  6. Pop the top half of the roll on, and you’re done!

  • Tomato slices

  • Mayonnaise or chipotle mayo

What you’ll need:

  • Bolillo roll

  • Scrambled eggs cooked with chipotle in adobo

  • Sliced fresh jalapeños (or pickled for tang)

  • Refried beans

  • Monterey Jack cheese

  • Hot sauce of choice

How to make it:

  1. Spread refried beans on the bottom half of your toasted roll.
