How to Make Torta de Milanesa Step-by-Step
- This is the fun part — once you’ve prepped your ingredients, it all comes together pretty quickly.
- Pound and season the meat
- Place your chicken breasts (or chosen meat) between two sheets of baking paper or clingfilm. Pound them gently with a rolling pin or meat mallet until they’re about 1 cm thick — this ensures quick, even cooking. Season both sides with salt, pepper, garlic powder, and paprika.
- Set up your dredging station
- Grab three bowls:
- Bowl 1: Plain flour
- Bowl 2: Beaten eggs
- Bowl 3: Breadcrumbs
- Dip each piece of meat into the flour first (shake off excess), then the egg, then press firmly into the breadcrumbs so it’s fully coated.
- Fry until golden
- Heat about ½ inch of oil in your frying pan over medium-high heat. Once hot, carefully lay in your breaded cutlets. Fry for 3–4 minutes per side, until golden brown and crispy. Transfer to a plate lined with paper towels.
- Prep the bread and toppings
- Slice your bolillos in half lengthways. If you like, toast them lightly for a warm, crunchy base. Spread refried beans on the bottom half, layer with lettuce, tomato, and avocado slices.
- Assemble your masterpiece
- Place the crispy Milanesa cutlet on top of your veggies, add cheese, jalapeños, and a generous drizzle of salsa verde or chipotle mayo. Cap it with the other half of your roll.
